The Red fruits Nectar Washed process is Rodrigo's innovative and delicate new purification method. It is a process in which locally harvested fruit is fermented for 190 hours in a well-prepared fermentation environment with lactic acid bacteria and Saccharomyces cerevisiae, and then the substrate produced during fermentation and coffee cherries that have been screened for sugar content are fermented for an additional 150 hours.
